Ingredients
- 454 grams organic quinoa
- 1 teaspoon sea salt
- 2 medium Roma tomatoes seeeded and diced
- 1 bunch green onions thinly sliced
- 1 cup dried cranberries
- 1 cup slivered almonds

- 2 tablespoons dried basil Don't use fresh it will brown
- 1 cup canola oil
- 1/3 cup cider vinegar
- 1 tablespoon Dijon mustard
- 1 large lemon zest and juiced
- 2 tablespoons organic sugar
- salt and pepper to taste
Directions
- Bring a pot of salted water or stock to the boil, add quinoa and free boil for 12 minutes, strain and refresh under cold water. Transfer to a bowl.
- Add tomatoes, onions, cranberries, and almonds to the quinoa
- With a hand blender mix dressing ingredients until sugar is disolved.
- Pour over salad and mix thoroughly
