Skillet Puff Pancakes

This is a wonderful way to start the day and can be served with fresh berries, fresh squeezed lemon juice and sprinkle sugar ... or warm pure maple syrup.

Ingredients

  • 2 large eggs
  • 1 cup 2% milk + 1 tsp cider vinegar
  • 1 cup
  • 1 pinch salt
  • 1/2 teaspoon baking powder
  • 1/4 cup butter

Directions

  1. In a bowl mix all ingredients, the more air you beat into the mix the fluffier the pancakes.
  2. Place large cast iron skillet in oven, preheat oven to 450 f / 234 c.
  3. Add butter and let it melt
  4. Add batter to skillet and return pan to oven
  5. Bake for 12-15 minutes until puffed and golden.
  6. Remove from oven and serve at once.

Serve with fresh berries, fresh squeezed lemon juice and sprinkle sugar. Or warm pure maple syrup.
